Lincoln County Home Economist Marsha Palmer, M.S. travels all over the county, presenting programs and working with various groups. She and Carolyn Felder, R.D., M.S. offer Kitchen Creations Diabetes Cooking School to diabetics and their families and caregivers. Her quarterly newsletter is sent to members of the two Lincoln County EANM groups, La Junta and Carrizozo. She works with the ICAN Nutrition Educator on programs for Head Start and clients of the WIC program..
ICAN (Ideas for Cooking And Nutrition)
Linda Valentine, our Nutrition Educator, teaches families to prepare simple, healthy, interesting, low-cost meals. Packets of information on nutrition, as well as the recipes for the meals prepared in class are given as part of the program. Those completing the six classes receive a certificate of completion and a cookbook.
Extension Association of Lincoln County (EALC)
Formerly known as "Extension Homemakers" and "FCE", EALC is open to all. "The mission of the EALC is to strengthen individuals, families, and communities through education, leadership, and action." There are two clubs in Lincoln County, operating under the umbrella of the Lincoln County Council and the County Extension Service. The clubs meet monthly, as does the Council, and all meetings are open to the public. Programs, picnics, and trips are an integral part of EALC, with friendship and fellowship as the keystones. Membership is open to all and not limited to women. Those living in Ruidoso or the Hondo Valley may wish to join the La Junta Club. President Lenore Welch may be reached at 653.4993.

Kitchen Creations Diabetes Cooking School
Offered to diabetics and their families or caregivers by reservation only, this 4-session class focuses on delicious, nutritional meals for diabetics. Dealing with diabetes does NOT mean eating tasteless, unattractive meals or starving!
Portion control, ingredient substitution, and use of herbs and spices are but a few of the topics covered. There is no charge to participants, who cook and enjoy meals during the sessions. Those completing the course receive a cookbook and a certificate of completion.
